I have become a little obsessed lately with putting peas into my meals, not sure why I just like the color green apparently. So it made sense to create a whole meal out of it, plus my wife loves split pea soup so this was easy to make.
I started by sauteing one onion and two cups of celery and four big garlic cloves everything was rough cut since I am going to puree everything together anyways. After around three minutes on high heat I add in two bags of frozen peas and let them start to warm up. While this is going on I have already cut up a one pound ham, I like the honey baked ham but feel free to use whichever flavor you like best. I place this in a pan with a little oil and let it start to heat up. The ham is already cooked so I am simply trying to get the ham a little crispy and get the ham to flavor the oil I am cooking it in. Now the peas and other veggies are cooked so I add in a box of chicken broth and around five cups of water. I will let this boil for around thirty minutes until everything is ready to be blended. I use a hand held blender, so simply plug it in and blend right in the pot. Once the peas, celery, and onions are fully blended I will add in the cooked ham and the oil for more flavor. Now the longer you can let this cook the better off the flavors will blend, the longer it cooks the more the flavors develop. This took around an hour to make and then I let it cook on low heat another two hours. It turned out awesome and oddly the second day of this soup was better then the first.
