I have become slightly obsessed with cooking with my cast iron skillet lately. We were having friends over and time was limited of course, so out came the skillet. This is a very simple and pretty healthy dish that took under an hour to make. I remember a long time ago a teacher of mine said “keep it simple stupid” this is so true with cooking, most of the time the simpler a dish the better I start out with bone in chicken breast, I absolutely believe that the taste and flavor you get with the bone in chicken breast is so much better then plain old chicken breast that I have stopped getting breast fillets or any other type of chicken breast. It may take longer to cook but the added flavor and taste is worth it. I start by putting some olive oil into the skillet and letting it get hot for around two minutes, I season the chicken with the basics salt, pepper, garlic, and rosemary on both side, I place the chicken into the pan and let it cook on both sides for around four minutes each side until it is slightly browned and the cooking process has started. When i am done with this I add in the veggies, I went with parsnips, sweet potatoes, and fingerling potatoes, I take the chicken out of the skillet and cook the veggies a bit before I place the chicken back into the skillet on top of the veggies and then I put this into the oven, I again season everything same thing, salt, pepper, garlic, and rosemary, I add some green onions and just for taste some butter and everything goes into the oven to cook, I have preheated the oven to 400 degrees so it is ready to. I like my potatoes a bit on the crunchy side so I let it cook in the oven a little extra but usually after 45 minutes the veggies are cooked and ready to eat.
- Ingredients for party of four :
- 4 bone in chicken breast (depending on size you could easily cut this down)
- three parsnips
- two medium sweet potatoes
- one pound bag fingerling potatoes
- two twigs of rosemary diced up
- green onion
- 3 table spoons olive oil
- salt, pepper and garlic powder to taste
- one teaspoon butter
- oven heated to 400 degrees’s and cook for at least 40 minutes
