For as long as I can remember hummus has been one of my favorite snacks.Hummus is a everyday food for me and the family, Eddie basically comes home everyday and asks for hummus and pretzels, and has it before dinner everyday. I decided since we eat so much of it why not start making our own.
To start you need some chick pea’s now if you have a lot of time, you can get dry chick peas and re-hydrate them. Put them in a pot of water, I like to put salt, garlic cloves, and lemon juice in the pot and then you let the chick pea’s sit in the water for around 24 hours when the chick peas are soft and ready to be processed, or you can get a can of chick peas and use that. Most of the time I go for the can of chick peas just because it’s easier and more time efficient. Now I put the chick peas into the food processor, along with this I add one good size beet, 4 table spoons olive oil, 3 garlic gloves, 1 table spoon tahini, salt, pepper and fresh squeezed lemon juice. Now I will let the food processor go for around 5 minutes, I will be honest the texture is not like the one from the store, I don’t have a vita-mix but I have heard that you can come much closer to the store bought texture with the vita-mix. While the food processor is going, I will add probably a 1/4 cup of water, and another 2 table spoons olive oil to keep trying get the hummus smoother. This is pretty much it, you can add more salt and garlic or lemon juice to taste but basically you are ready to go.

- 1 whole beet
- 1 whole lemon squeezed
- 6 table spoons olive oil
- 3 garlic cloves
- 1 table spoon tahini
- salt and pepper to taste
- 1/4 cup water
