Cauliflower Soup

Sometimes going out to a restaurant can inspire new dishes, we went out to eat and we got a cup of cauliflower soup, I tried it and liked it, so of course I tried to make it my own.  Even though it has been around 105 degree’s out still have been craving soup and comfort food.  So thank you to LGO for inspiring this dish and giving me some much needed inspiration

Beet Hummus

For as long as I can remember hummus has been one of my favorite snacks.Hummus is a everyday food for me and the family, Eddie basically comes home everyday and asks for hummus and pretzels, and has it before dinner everyday.  I decided since we eat so much of it why not start making our own.

Paella

Unit around a year ago I had never even tried to make Paella, it was on of those dishes that I loved eating and trying but was not sure I could make.  The first time I tried making we invited some friends over and I warned them I have no clue how this will turn out but we will serve a lot of wine so we will be OK.  I of course forgot the saffron a pretty big miss step but the meal wasn’t to bad so I gained more confidence in making it.

Tomato Soup and Grilled Cheeese

Some times you just want to have a classic comfort food.  One of my favorites has always been tomato soup and grilled cheese sandwich.  The best part of comfort food is you can have it for dinner, lunch or breakfast, it doesn’t matter it will always make you smile and feel good.

Fresh lasagna

We have had a lot of close friends recently have babies so of course the first thing I think about is what food can we bring over to at least make sure the new parents are eating well.  Lasagna has been my meal of choice, it is really the perfect meal I think, it will last a couple days, hearty, comfort food, and damn good.

Pressure Cooked Ribs

Since it has been a 110 degrees plus for the past month or so here in the dessert I have been trying to figure out a good way to make summer bbq food indoors.  I got the instapot around six months ago and have started to use the pressure cooker mode more and more lately.  It’s to damn hot to be outside smoking and grilling right now but ribs are to good to go a whole summer without.

Prime Rib Sandwich

When you find a good sandwich if you are like me you will always find the time to go and get that sandwich regardless of how out of the way it may be.  The Prime Rib Sandwich from Eatly in Chicago might be my favorite sandwich, normally I like a lot of toppings and meats on my sandwich’s, this sandwich is as simple as it is delicious.

Mac and Cheese

As I said I am obsessed with using the cast iron skillet and have been wanting to try out making mac and cheese on it.  So Sunday night dinner seemed to be as good as time as any to try.  Now I always like to add in some extra flavoring so what goes better with mac and cheese then bacon, ham and peas.  Now I went with three different cheeses Monterrey jack, mild cheddar and Swiss.

Cast Iron Skillet Chicken Dinner

I have become slightly obsessed with cooking with my cast iron skillet lately.  We were having friends over and time was limited of course, so out came the skillet.  This is a very simple and pretty healthy dish that took under an hour to make.  I remember a long time ago a teacher of mine said “keep it simple stupid” this is so true with cooking, most of the time the simpler a dish the better

Mora’s Italian

I love pasta and am always looking for new Italian restaurants to try and go to.  Mora’s Italian  is the creation of Scott Conant’s I have always liked him on Food Network and kept hearing how good the food is, so was very excited to go and try it out.  We took Eddie which is always a risk with a new restaurant but no baby sitter means going out with the little man.  The restaurant was very kid friendly and had the open kitchen so we could all watch the staff cook our food, and play I spy while we wait.
