Mac and Cheese

As I said I am obsessed with using the cast iron skillet and have been wanting to try out making mac and cheese on it.  So Sunday night dinner seemed to be as good as time as any to try.  Now I always like to add in some extra flavoring so what goes better with mac and cheese then bacon, ham and peas.  Now I went with three different cheeses Monterrey jack, mild cheddar and Swiss.

Cast Iron Skillet Chicken Dinner

I have become slightly obsessed with cooking with my cast iron skillet lately.  We were having friends over and time was limited of course, so out came the skillet.  This is a very simple and pretty healthy dish that took under an hour to make.  I remember a long time ago a teacher of mine said “keep it simple stupid” this is so true with cooking, most of the time the simpler a dish the better

Ladies Dinner

Several years ago my wife and her friends started a ladies dinner, for young professional women.  It’s a group of close to 10-15 women who are all amazingly successful and come together to talk and support each other.   I was lucky enough to cook for them  and that is really one of the big starting points for what I have been doing lately and gave me the confidence to cook for bigger groups.  I was asked to cook for another one of these dinners and was happy to accept the challenge.

Split pea and ham soup

I have become a little obsessed lately with putting peas into my meals, not sure why I just like the color green apparently.  So it made sense to create a whole meal out of it, plus my wife loves split pea soup so this was easy to make.

Salmon Burgers

Tonight’s Sunday dinner was my first attempt at making Salmon burgers.  The weather is perfect for grilling and red meat didn’t sound appealing, we haven’t had salmon for awhile so decided to try and make a salmon burger.  This was surprisingly a quick and easy meal to make and turned out better then I was hoping for.  This meal is healthy, quick, and good.

Sunday Brisket with coleslaw and asparagus

When I grew up we always tried to have dinner together, it was a time to talk and be together as family.  Now that I have a family of my own I understand more and more why my parents wanted to make sure that we always had dinner together.  It was a time to talk and be together with no distractions.  During the week things are always busy and hectic, but Sunday nights seem to always be a more relaxed and better time to reconnect with each other and have a great dinner.  So I am going to try and do a weekly blog of our Sunday dinner.

I will be completely honest, I hate measuring things out and following exact directions. I feel cooking is about trial and error and individual taste. As part of this blog, I will list all the ingredients I use in each recipe along with a description of steps…but remember my philosophy…let yourself have fun, experiment, and enjoy the process!

Fresh Halibut and Asparagus

This is one of my favorite meals to make and eat.  We are very lucky that Eddie likes fish so I try to make it with him as much possible.  This meal is one of the easier and simpler meals to make and depending on the sides you chose it can be done in around twenty minutes.  The great thing about this dish is it can be used as a middle of the week family dinner or a nice elegant dinner with friends.
