Fall might be my favorite time of the year, thankfully I live in out in Arizona so fall lasts usually from mid September to March. Part of why I love fall so much is because it now becomes stew, soup and chili time. I am a big fan of chili and will probably post several different types of chili just because it is so good to eat. This chili is one of my more basic ones but so good.
For this chili I am going to use ground pork, but you can substitute basically any ground meat you like and this recipe will still work. I start by browning and cooking the meat, first I use olive oil on the bottom of the pot and then put the meat in, along with the meat I add some fresh garlic. As the meat gets cooked I will get the other ingredients ready to go into the pot.
First I add a whole onion, next I add in one big red pepper, and next my beans, I used garbanzo and kidney beans for this chili, I am trying to get a lot of protein in my foods so I went with the two beans. After I add all this in I continue to stir the pot, I add in salt, pepper, paprika, garlic powder, chicken consomme seasoning, and some thyme. Since two thirds of my family do not like spicy food, I cannot add any peppers or jalapenos however this is where they should be added. As the meats and veggies all cook together along with the spices, I cut up a box of grape tomatoes and put it into the pot, I let it all cook for around ten minutes on high heat stirring frequently and now I add in two cans of stewed and chopped tomatoes and let it all cook and boil for around hour on low heat.
Now I have been told I am weird but I grew up putting chili on top of rice, so this is how I have always ate my chili, but chili is great on anything and this chili is super simple and good so put it on whatever you would like. I served this covered in cheese and topped with some chives, but toppings are always up to the eater so I leave that up to you

- 5 garlic cloves
- 1 large red bell pepper
- 1 can garbanzo beans

- 1 box grape tomatoes
- 2 cans stewed tomatoes
- 2 tablespoons salt
- 1 tablespoon pepper
- 1 tablespoon paprika
- 1 tablespoon chicken consomme
- 1 teaspoon thyme
