Since it has been a 110 degrees plus for the past month or so here in the dessert I have been trying to figure out a good way to make summer bbq food indoors. I got the instapot around six months ago and have started to use the pressure cooker mode more and more lately. It’s to damn hot to be outside smoking and grilling right now but ribs are to good to go a whole summer without.
Now I go for the baby back pork ribs, I can get a whole rack into the instapot so that is what I have been using, I cut it into four sections and place it into the instapot after i make a dry rub for them. Before putting the ribs in the pot I add a couple cups of water, a cut onion and Worcestershire sauce in the water for some extra flavor (substitute smoking), I place the ribs on the rack in the instapot and it’s ready to go . The dry rub is a combo of paprika, garlic powder, rosemary, salt, lemon pepper and oregano. I have found that 3 hours under the pressure cooker is about the perfect time to make the ribs fall of the bone. I will take the ribs out and you can either go ahead and serve with just the dry rub or if you like some great bbq sauce I will use Sweet Baby Ray’s bbq sauce and put them covered in sauce for 15 minutes then serve the ribs. Now sides are up to you, I am big fan of either corn on the cob or potatoes in some form, but be creative and do what you like.
Four person dinner
- one rack of pork baby back ribs
- table spoon salt, and lemon pepper spice
- 1/2 spoon garlic powder
- 1/4 spoon paprika
- a pinch of oregano and rosemary
- mix dry and apply generously
- place in pressure cooker for 3 hours take out and then eat or use your favorite bbq sauce to cover
