Tonight’s Sunday dinner was my first attempt at making Salmon burgers. The weather is perfect for grilling and red meat didn’t sound appealing, we haven’t had salmon for awhile so decided to try and make a salmon burger. This was surprisingly a quick and easy meal to make and turned out better then I was hoping for. This meal is healthy, quick, and good.
To start off I got a pound of salmon, I chose to get it with the skin on and fresh. To start I got out the food processor and put in dill, capers, bread crumbs, lemon juice, egg, mustard, salt and pepper, and then the salmon. I mix everything until it is a puree using the pulse mode on the processor.
When this is done I get everything else ready, I have become a big fan of the Kumato tomato so I use that, lettuce and some green onions. I make a mustard dressing using stone mustard, olive oil, dill, and salt I simply mix it by hand and put it in the fridge. We chose to use Hawaiian Rolls they are great and light and perfect for this meal. Next I get the asparagus ready, I simply cut part of the stems off, put some olive oil, lemon juice, salt and pepper. Now we are ready to grill, I was nervous about the salmon sticking to the grill so I sprayed the grill with Pam. I turn the grill up high, I want this to be done quick, so I let the grill get to a high heat, once the grill reaches 400 degrees I put the asparagus on first and shut the lid again. After one minute I will put the salmon burgers on, again all this is being done at a very high heat so the cooking will not take long. I roll the asparagus and close the lid again. After three minutes I open the lid up and take the asparagus off the grill and wrap it in in tin foil, I flip the burgers and close the lid again for another two minutes and then take the burgers off the grill. At this time you are done and ready to eat, like I said easy and quick.
Salmon Burger
- one pound fresh salmon
- one egg
- 2 table spoons stone mustard
- 1 cup bread crumbs
- 1/4 cup lemon juice
- 2 tablespoons capers
- 1 teaspoon dill
- salt and pepper to taste
Asparagus
- one bushel of asparagus
- one tablespoon olive oil
- 2 tablespoons lemon juice
- salt and pepper to taste
