Tomato Soup and Grilled Cheeese

Some times you just want to have a classic comfort food.  One of my favorites has always been tomato soup and grilled cheese sandwich.  The best part of comfort food is you can have it for dinner, lunch or breakfast, it doesn’t matter it will always make you smile and feel good.

To start I like to get plum tomatoes, I will roast them in the oven for around an hour, I roast them with olive oil, garlic and salt and pepper.  While they are roasting I will I will cut half a onion and sweat it down in a pot, I add some fresh garlic and olive oil and let it cook together.  After the tomatoes are done roasting  I pull them out of the oven and put them into the soup pot, I will add fresh basil, some salt and pepper and let it cook for ten minutes on high heat.  After ten minutes the tomatoes are ready to be pureed, I like to use the hand held blender but you can use a blender if you like.  Once your done blending you are basically ready to go, I like to add a little Parmesan cheese on the top and some fresh basil and avocado for just a little more flavor.

Now grilled cheese is really a personal choice, I prefer a sharp cheddar for this particular sandwich I also added turkey but never be afraid to use bacon, because bacon is awesome.  I like to season my toast, I spread the butter then use a little garlic powder and oregano or dill.  Melt that cheese and you are ready to go. I love pickles so I will always have some on the side but again every one I’m sure has there go to chips or sides with this dish as well

Ingredients:

  • 1 lb plum tomatoes
  • half a onion
  • handful of fresh basil
  • 5 cloves garlic
  • salt
  • pepper
  • 2 tablespoons olive oil
  • top with table spoon of Parmesan cheese and avocado slices
